Vegetable-stuffed Peppers
6 medium green peppers 1-1/2 cups canned or fresh corn 1 cup diced fresh or canned tomatoes 1/2 cup soft bread crumbs 1/4 cup finely chopped celery 2 tablespoons melted butter or margarine 1 tablespoon finely chopped onion 2 slightly beaten eggs 1-1/4 teaspoons salt Dash Pepper
OVEN: 350o
Remove tops and seeds from peppers; parboil 5 minutes; drain. Combine remaining ingredients and stuff peppers.
Place upright in greased 10x6x1-1/2-inch baking dish; add small amount of water; cover and bake in moderate oven (350o) 1 hour. Makes 6 servings.
Meat-stuffed Peppers
8 green peppers 1 small onion, chopped 1 pound ground beef 2 tablespoons fat 4 medium tomatoes, chopped 1-1/2 cups cut, fresh corn (3 to 4 ears) Salt and pepper
OVEN: 350o

Brown onion and meat in hot fat; add tomatoes, corn, and seasonings; stuff peppers and top with buttered crumbs.

You're very welcome, Q. The recipes were in a very old Betty Crocker cookbook, so if you happen to have an old one, or your Mom, you'll probably find them in there. Mom's cookbook is a notebook type thing.

Hey Jox Mom gave me her favorite cookbook when we were there. Well, I came across it and when I mentioned it, she said to take it, but "not to let it get away". It's one she's had as long as I can remember. Published in 1942, but the first print wasn't until 1958. (Can someone please explain what that means, exactly) She only used a cookbook for baking, but this one was always around. I had it lying on the counter at the shop and one of our regulars picked it up as soon as he saw it. I was in the restroom and Mare told him quickly what mom had said when his first comment was he collected old cookbooks. It's tattered and the binding is broken, and I can only imagine what all the faded drops and smudges are, but there are notes and scribbles and added bookmarks all through its 600+ pages. I'll probably treasure it forever.

Very nice. Mom got her mother's cook books. I'm the book lover in the family, so I might get them some day. Then again, maybe not.
My family's not much on books and reading. So I told mom the other day that if anything happened to me while she was still alive: DO NOT throw all my books in the trash. Give them to a library or sell them to a used bookseller. Man. I'll haunt them is they throw my beloved books in the garbage.
BTW: Have you tried the recipes? Anyone like/hate them?
